Structural Components:
1. Vacuum Sugar Infusion Tank: The main processing unit that achieves sugar solution penetration through a negative pressure environment. The tank is made of 304/316L stainless steel, offering corrosion resistance and compliance with food hygiene standards.
2. Auxiliary Functions: Include a sugar dissolving tank (for dissolving sugar solution), vacuum pump (for air extraction), sanitary pump (for circulating sugar solution), filter (for removing impurities), and PLC electrical control cabinet (for automated parameter control).
Working Principle:
Vacuum Stage: Under negative pressure conditions (vacuum level reaching -0.09MPa), air and moisture between fruit and vegetable cells are extracted, forming a hollow structure.
Penetration Stage: High-concentration sugar solution rapidly fills the cell gaps under pressure difference and gravity, improving penetration efficiency by 3–5 times.
Circulation and Temperature Control: The sugar solution is maintained at a constant temperature through an external heating circulation system (steam or electric heating), preventing nutrient loss due to high temperatures while evaporating moisture to increase sugar concentration.
