Ethyl lactate is produced by esterification of ethanol in the presence of sulfuric acid. It is a colorless liquid with a slight odor. It is miscible with water and can be mixed with organic solvents such as alcohols, aromatic hydrocarbons, esters, hydrocarbons, and oils. It is flammable and may crack upon contact with oxidizers.

Ethyl lactate is a food flavoring permitted for use in China. It is mainly used to formulate edible flavors such as apple, pineapple, caramel, and frankincense, and is also used in rum, baijiu, and other alcoholic flavorings. Generally, it is used at 1000 mg/kg in alcoholic beverages; 580–3100 mg/kg in chewing gum; 71 mg/kg in baked goods; 28 mg/kg in candies; and 17 mg/kg in cold beverages. Additionally, it can be used as a solvent for cellulose esters, resins, coatings, etc., as well as a fragrance and cleaning agent for electronic products.
