Properties:

White powder, specific gravity 2.484 (20°C), highly soluble in water, insoluble in organic solvents, strongly hygroscopic, gradually absorbs moisture in air to become gelatinous. It can form soluble chelates with metal ions such as Ca, Ba, Mg, Cu, Fe, etc., making it an excellent water treatment agent.

Applications:

(1) Industrial uses include oil fields, papermaking, textiles, printing and dyeing, petroleum, chemical industry, leather, metallurgy, building materials, etc., serving as a water softener, buffer, flotation agent, dispersant, and high-temperature binder;

(2) In the food industry, it is used as a quality improver, pH regulator, metal ion chelator, adhesive, and expansion agent. In beans, canned goods, and bean paste fillings, it stabilizes natural pigments and maintains color; in canned products, it emulsifies fats and ensures uniform texture; in canned meats and meat products, it improves water retention and prevents fat spoilage. When added to beer, it clarifies the liquor and prevents turbidity. It is an excellent water softener that produces no sediment. In aquatic product processing, it functions as a water-retaining, expanding, and bleaching agent. The general addition amount of sodium hexametaphosphate in food processing is 3-5‰, with a maximum addition of 3% in aquatic product processing.
