Properties:

Dipotassium phosphate trihydrate appears as white crystalline solid with water content. The anhydrous form is a white powder. It is highly soluble in water, producing a slightly alkaline solution, sparingly soluble in alcohol, hygroscopic, and self-dissolves at higher temperatures. When heated to 204°C, anhydrous dipotassium phosphate converts into potassium pyrophosphate.

Applications:

(1) Industrially used for boiler water treatment, pharmaceuticals and fermentation; serves as a phosphorus and potassium regulator, bacterial culture medium, raw material for producing potassium pyrophosphate, liquid fertilizer, corrosion inhibitor for ethylene glycol antifreeze, and as a nutritional supplement in animal feed; (2) As a food additive, dipotassium phosphate is commonly used as a leavening agent, flavor enhancer, raising agent, buffering agent, and mild alkaline agent in dairy products.
