Physical and chemical properties: Colorless transparent crystals or white granules, melting point 324°C, density 1.528g/cm3. Slightly soluble in ethanol.

Uses: Used as an esterifying agent in organic synthesis, as well as in photographic chemicals, pharmaceuticals, dyeing mordants, buffering agents, chemical reagents, meat preservation, pigments, tanning, and many other applications. It can be used to produce various chemical products, such as furan acrylic acid, acetate esters, etc. As a buffering agent in condiments, it can mitigate undesirable odors and prevent discoloration, offering certain antifungal effects. It is also used as an acidulant in seasoning sauces, pickles, mayonnaise, fish cakes, sausages, bread, and sticky rice cakes. When mixed with methyl cellulose, phosphates, etc., it is used to enhance the shelf life of sausages, bread, sticky rice cakes, and similar products.
