Properties: Sodium hexametaphosphate appears as a transparent glassy powder or flaky solid, with a relative density of 2.484. It is hygroscopic in air and highly soluble in water—973.2 grams per liter at 20°C and 1744 grams per liter at 80°C. The pH of a 1% solution is approximately 5.5-6.5. It is insoluble in organic solvents, and in neutral media, the final hydrolysis product is orthophosphate.
Uses: In food processing, it is used as a chelating agent, emulsifier, suspending agent, water-retaining agent, and water treatment agent.
