Appearance: Yellowish-brown powder. It is a metabolite produced by Bacillus subtilis through deep fermentation, followed by salting out, drying, and grinding into powder. Soluble in water. Most neutral proteases produced by microorganisms are metalloenzymes, containing one zinc atom per molecule of protease, with a molecular weight of 35,000～40,000 and an isoelectric point of 8～9. It is the most unstable enzyme among microbial proteases, prone to autolysis, which can lead to a significant reduction in molecular weight.

Usage: Biochemical research, extraction of polysaccharides, and hydrolysis of various plant proteins. Under neutral conditions, it catalyzes the breakdown of proteins or high-molecular-weight peptide bonds, producing small molecules such as peptones, small peptides, and individual amino acids.
