6.1 Wide range of antimicrobial activity:ε-polylysine can inhibit the growth of Gram(+) and Gram(-) bacteria, yeast, ect., especially inhibit the Gram(-) bacteria which can’t easily inhibit by other preservatives.

6.2 Good heat stability:ε-polylysine activity is not affected by heated(120℃ for 20min).Therefore, it can be sterilized along with the raw material.

6.3 Stable at wide range of pH:ε-polylysine activity is not affected by pH(pH 2-9)

6.4 Good synergistic ability:ε-polylysine shows synergistic antimicrobial activities with organic acid, Nisin, fatty glyceride and glycine.

6.5 High safety:ε-polylysine is a homopolymer of L-lysine, an essential amino acid. It can decompose within the human body, and can be completely digested absorption by the human body, not only doesn’t have any poisonous side-effect, but also can be regard as the source of one kind of lysine.
