Chitosan is used in fields such as food, chemical industry, and cosmetics. Additionally, chitosan is listed as a thickener and coating agent in the food additive standard GB-2760.

Chinese aliases: Deacetylated chitin, Chitin polysaccharide, Chitin sugar. Both chitin and chitosan are white powders or grayish-white translucent flakes or powders, odorless, tasteless, and non-toxic. Chitosan has a slight pearlescent luster. During manufacturing, the relative molecular weight of chitin and chitosan is generally indicated by viscosity values. Commercial chitosan comes in three different viscosities depending on its use: high viscosity products (0.7–1 Pa·s), medium viscosity products (0.25–0.65 Pa·s), and low viscosity products (<0.25 Pa·s). High-viscosity chitin or chitosan must be used for producing fiber products.
